Buttercream Recipe

I was in the last minutes before spreading the buttercream to roll cake. I created it and i was amazed myself about the taste. It was actually inspired by common buttercream recipe everywhere. Yet, somehow, using those recipes didn’t satisfy me.

Ingredients:

100 gr Soft Cream (I use hollman. I don’t know if it’s available in your place)

100 gr butter (same brand, Hollman)

3 tbs of condensed white milk.

1/2  tsp of vanila essence + 1/2 tsp rhum + 2 tbs baileys

*About the condensed milk and sugar, I started with condensed milk first

Mixed them all using mixer until the colour is ‘lighter’.

Taste it, if it’s still not sweet: Add sugar, start with 2 tbs of powdered sugar.

Taste again.

I added milk and sugar after that but i always add milk first!
Adding sugar always result in  ‘bitter’ taste (somehow…even it’s a sugar).

I added about 1/2 tbs milk

Keep tasting until you get it right. I don’t like too sweet so, for me 3,5 tbs milk and 2 tbs powdered sugar are a stop.

I’m so careful about adding sugar because few times i follow recipes, it tastes bit instead sweet. It’s sweet but then leave bitter kind of taste in my mouth.

Other stuff that i’m carefully to add is the vanilla essence. It can make your buttercream (or cake) taste bit, too. Be careful while adding!

 

Note:

hollman soft cream is kind of cream that is added when making buttercream. It is, as it’s named, : very soft. I like the smell anyway but the taste itself is neutral (not sweet nor salty). The purpose is to softened the buttercream dough as well as creating a better taste in our tongue. Using butter only or white margarine sometimes creating kind of ‘thick’ taste in our tongue.

It’s not kind of whipped cream, Whipped cream is melting-easy. This soft cream is not. I’m not sure if it’s replaceable with whipped cream. You can try but don’t expect the same result. My buttercream doesn’t melt. The softcream is sold in the room temperature anyway. Not in a cooler.

I don’t use white margarine/butter. I used regular or salted butter. Some recipes combine soft cream with white butter. So, yes, the soft cream is NOT a butter.
