I couldn’t find any chestnut paste in my country so i looked into lots of reference and ended up with face (@.@). Haha. So, I just combined the whole reference i got.
Ingredients
240g roasted chestnut, chop
160ml water (you can start with 100ml and then add gradually. Not necessarily up to 160ml. Please read my note below)
1/4 tsp rhum
2 tbs sugar (optional)
I used food chopper to mix them all.
Sieve to refine the paste
Add water gradually because the paste can be too liquid when added with whipped cream. So, actually we can judge ourselves when to stop adding water according to our need or preference. Yet, water is a must. It will be helping in grinding the chopped chestnut better
Sometimes, using chestnut jam is good too for mont blanc but it can be too sweet and I don’t know…sometimes, there’s a weird taste as well…
About roasted chestnut. Some youtuber or chefs taught us about making it from scrap but I think, i prefer just buy it. I don’t have extra time to do it myself. I wouldn’t know if it’s well-roasted or not and i don’t know how to choose the good chestnut or not. It can be quite lots of task for me. I just want to make a simple cake, so I just buy it from shop and accept the roast consistency as well as chestnut quality.
