Chocolate Chiffon: Using Expensive Ingredients

Sometimes in baking, we have a lot of option regarding to ingredients brands. Today, once again, I found that expensive brand ingredients don’t always give the result I want.

  1. I used callebaut when making brownies. A celebrity chef use it for her brownies and she likes it. I don’t feel that way. Yet, I use callebaut choco powder for another cake and irreplaceable.
  2. Another famous youtuber-chef, also uses expensive chocolate for her roll cake. I did try it. Once and no more trial. I prefer my regular brownies which uses “cheaper” chocolate.
  3. I used different chocolate for my brownies one day. It tastes so different.

 

Some people, when learning, also want to know the ingredients brand their tutor/chef using. They expect to create the same yummy cake. I think, instead of investigating the brands, it’s better if we find our own TASTE. What kind of cake taste and aroma that we want to achieve. Don’t be just a passive baker and always afraid to try (of course if you have budget to do R&D. It would be better)

I remember, I was offered a different chocolate brand for my cake. I refused. It’s not about PRICING anymore. Cheaper or More Expensive is not my first priority when choosing ingredients even if it’s for sale. If it’s for sale, I prefer to use “optimum” principle. The best combination of ingredients that create the aroma and taste I want at best COST. So, I don’t just trade my cake taste and aroma just to lower my price. It was also not because I was afraid using another brand; I did it previously for my cake and it was failed. I went back to my regular chocolate; I had achieved the taste I want with that chocolate, so the journey for the cake is finished. I don’t want to try another brands, whether more expensive nor cheaper.

Well, perhaps, that’s why I have hard time to sell my cakes. Hahaha. Well, each decision has it’s own risk. That’s my risk, yet my regular customers always said, they love my cake.

Yet, please just don’t trade too much. Expensive doesn’t always mean better, and so the cheaper ones. Just find your own taste, not following the trend of using brands that are advertised by celebrity chef or even your favorite chef.
